Best Liptauer Cheese Spread or Dip Cream

This is one of my favourite sandwich spreads and I LOVE spreads with fresh crusty bread. “Korozott” or “Liptauer” is popular Austrian and Hungarian delicacy which also could be used as a dip with crackers or sticks of celery, cucumber or carrots as a healthy snack. Great filling for stuffed roasted tomato or pepper too. It’s made with 2 different soft cheese: sheep milk cheese (like Bryndza) and quark (or corrage cheese). This recipe is from my mum and honestly, I never tasted any better version of it, this is the best 😉 Children love it too: a lunch box favourite, just fill a bagel with it. It can be prepared spicy or mild. It only takes about 20 minutes to prepare it.

Ingredients:

400g sheep milk cheese (Bryndza)

400g quark (or cottage cheese)

1/2 large onion finely chopped

1 tbs sour cream

150g unsalted butter (room temperature)

3 ts ground sweet paprika

1 heaped ts ground cumin

Optional: chilli cream to taste

Directions:

In a large bowl mix everything well with a hand mixer until it’s soft, creamy and fluffy. Add some cumin seeds and chilli cream as decoration. Serve it with fresh crusty bread or toasts, as a dip with fresh vegetable sticks, or fill a bagel with it.
