Beetroot, Orange and Ginger Soup

It’s winter! Well actually it’s the 1st of December as I’m typing this. And all of a sudden the weather has also turned a little chillier hasn’t it? This always makes me feel pretty good. Well winter is supposed to be cold isn’t it? Teen temperatures at the end of November are not too great for my climate anxiety. 

Cold weather means making and having ALL the soups! I absolutely love soups in winter with a chunk of bread or toast (a totally must-do requirement!). I could honestly have a lovely soup every day (a different one each day of course!).

Now this might sound odd at the first read when you read the title. But if you like beetroot, this particular soup is most definitely for you. And if also you like spicy winter warmers, definitely try this. It is so very refreshing and still warming – a truly energising soup. You will just feel bursting with life after eating this – please trust me! It’s an interestingly beautiful combination of beetroot, carrots, orange and ginger. It’s just wonderful!

And the best part of it is, this vegan beetroot soup with orange and ginger is super easy to make. Throw all the ingredients into the pan, cook and blend. Voila. Add a dollop of creme fraiche or sour cream (or vegan version of these) if you wish. Enjoy!

Beetroot, Orange and Ginger Soup -refreshingly spicy with ginger, winter warmer for the body and soul.

  • 4 small beetroots peeled and chopped
  • 2 large purple carrots (or regular) peeled and sliced
  • 30 g fresh ginger minced
  • 1 large onion peeled and chopped
  • 1 large juice of an orange
  • 1 litre vegetable stock
  • 2 tsp vegetable oil
  • salt and pepper to taste
  1. Heat the oil in a large pan and fry the onion until it's softened. Add the ginger. Add the beetroots and the carrots and fry them until the oil is completely gone. Stir frequently.

  2. Add the orange juice. Cook for 3 minutes.

  3. Add the stock and cook for 40-45 minutes until the vegetables are soft.
