The nut butters were kindly gifted by Indigo Herbs of Glastonbury.
Nut butters are a fantastic alternative to regular butters and spreads. They are high in vitamins, minerals and healthy fats – very beneficial for heart health. They are lower in calories and fat, and higher in protein and fibre. I do love peanut butter but I also often use almond butter and tahini. They are also very versatile – they are so much more than just a bit of a fancy toast butter with jam! I use them for creating healthy and tasty snacks and desserts as well as cooking meals.Jump to recipe
To help me on the journey of a going vegan this month as part of Veganuary 2019 I received a selection of Indigo Herbs of Glastonbury’s nut butter collection and I’d like to share the first recipe I have created using these lovely nut butters (there will be another recipes coming too!).
For this recipe, I have used a combination of hazelnut and almond butter in half and half. In my view, you could use all sort of nut butters or any combination, just play around with the flavours and the texture. I also used Scottish oats – which are naturally gluten free, so even gluten intolerants can eat these. If you don’t have maple syrup at home, you can also use honey – but then it won’t be vegan of course. (Nevertheless, it is still healthy – definitely healthier than refined sugar!) As I mentioned it in the recipe I really enjoyed the ones with sprinkled with rock salt – it’s such a yummy combination in my view: dark chocolate and sea salt. But feel free to use any kind of sprinkles you like.

Super easy, simple to prepare, yummy and healthy nut butter bites covered in organic chocolate, but that's optional of course!
- 250 gram hazelnut, peanut or almond butter or the mix of them
- 7 tbsp Scottish oats
- 4 tbsp maple syrup
- handful chocolate chips vegan
Measure out and add all the ingredients to a mixing bowl.
Combine them well.
Form the little balls (you should get at least 12 balls depending on the size you're making them). Place them into the fridge for 30 minutes to firm up a little bit.
Melt chocolate and dip the bites into the melted chocolate.
Add your choice of sprinkles if you want - I did like the ones with rock salt the best! Pop them back into the fridge to help the chocolate dry faster.
