Homemade Pumpkin Granola Bar Mummies for Halloween

These are so much fun to make with your little people. The granola bars themselves take about 50 minutes to make and there’s no refined sugar added – I’m not saying they are super healthy but not that bad either. It’s also a good way to save the pumpkin carving remnants and turn them into something yummy. 

You can go ahead with Scottish oats only, it will make no difference to the end product. I only used half Scottish oats and half store bought granola as the kids didn’t eat it and wanted to use the remaining bits of a box of granola. We’re trying our best to reduce our food waste, you see.

Making the mummies is the best part of the whole process of course, after cutting the granola bars up into even pieces just need to play around with the sugar paste and to be honest – it’s perfectly fine if they don’t look even and neat because they meant to be mummies anyway! 

They are delicious as snack and of course they can double up as Halloween party food or trick or treat sweets.

These are very easy to prepare and require no extra ingredients - plus a great way to use up all that pumpkin from the Halloween carving.

Course: Snack

Servings: 12 Bars
Ingredients
  • 170 g Scottish oats
  • 170 g Granola of any flavour
  • 200 g Pumpkin purée
  • 2 tbsp Seeds of your choice Chia, sunflower, pumpkin or a mix of them
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Salt
  • Handful Chocolate chips
  • 90 ml Maple syrup
  • 1 tbsp Honey
  • 1 tsp Vanilla extract
  • 1.5 tbsp Olive oil
  • 150 g Icing sugar For the icing
  • 1-2 tbsp Boiling water For the icing
Instructions
  1. Preheat oven to 180 Celsius. Chop the pumpkin into small cubes and roast them for about 30-40 minutes until they are soft. Place the oats, the  granola and the seeds.

  2. Add the chocolate chips, the salt and the cinnamon too.

  3. Blend the rosasted pumpkin with a hand blender and stir in the maple syrup, the olive oil, the honey and the vanilla extract.

  4. In a mixing bowl, combine all the ingredients antil they are all mixed well.

  5. Preheat oven to 170 Celsius and fold the mixture into a shallow cake tray or baking dish evenly. Press it down with the back of a spoon.

  6. Place it in the oven and bake it for about 15-20 minutes. Take it out when ready and let it cool before decorating.

  7. Mix the icing sugar with the boiling water until you get a smooth paste, with the consistency you want. Decorate with icing sugar and candy eyes.
