I loved this fantastic recipe. I’m normally not a fan of white chocolate (it’s NOT chocolate to me…) but muscavado white chocolate? It made such an impressive difference! It’s a little more expensive, naturally. Especially as these luxurious chocolate cookies are made with decent, organic, fair trade chocolate I used from Tradecraft (I received it as a gift from someone, as I don’t like white chocolate, I thought it’s perfect for using it in cookies). But what a difference it makes!
What is it all about?
It’s a sweet and buttery white chocolate that is infused with rich, caramel notes of fair trade Muscovado whole cane sugar from the Philippines. It’s just gorgeously indulgent and makes for really luxurious chocolate cookies. I think the quality of this chocolate made everything better. It contains no emulsifiers, cheap oils, or artificial colours or preservatives.
I always advise buying fair trade products whenever you can do so. Yes they are a little more expensive, so that the farmers and growers can make a decent livelihood too – not just the big and powerful corporations. The chocolate that costs you £1.20 in the supermarket has hardly seen any real cocoa and the big labels producing them pushing farmers into poverty by not paying them a proper and fair price.
Fair trade is about supporting producers to grow their own businesses, helping them to have an impact on their own communities, giving them direct access to markets. Not to mention of course bypassing corrupt local businesses and shady government officials along the way.
Anyway back to these superlative cookies – they are super simple and yet luxuriously delicious. Enjoy them!

Chocolate Cookies With Muscovado White Chocolate Chips - a little extra luxury to the classic cookies
- 215 g all purpose flour
- 170 g soft brown sugar
- 115 g margarine or butter room temperature
- 20 g cocoa powder unsweetened
- 20 g carob powder can be swapped for cocoa powder
- 1/2 tsp baking soda
- pinch salt
- 100 g muscovado white chocolate chips or chunks
- 1 egg

Place every ingredient into a bowl and mix them with your hands.

Add the white chocolate chips.

Place the dough into the fridge for 30 min at least.

Preheat oven to 170 Celsius.
Bake the cookies for 10-15 minutes. Enjoy.
