Living on these at the moment. Too hot in London! Too hot to cook, bake, take a walk, sleep and the kids are tired from the heat and not sleeping well, so they whinge and whine a LOT. So apart from worrying about climate change slapping this heatwave into our face, Covid-19, the children’s education and our own health, I even have to listen to their whinging practically 16/7 because although luckily they sleep at leat 7 or 8 hours these nights, but then I’m mostly asleep during those hours as well so it really feels the whinging goes on for 24/7.
But nice food always a treat. Only that I don’t fancy cooking in this hot weather at all. I’m not even really hungry to be honest, I just want to eat fresh fruits and vegetables.
And these are a real favourites of mine: tostadas con tomate (or pan con tomate). Toast with grated tomato but it sounds posher in Spanish doesn’t it? I used to eat them a lot when I used to live in Ibiza. They eat these with Ibicencan ham, mainly for breakfast and as tapas. Not much of a recipe of course, but the trick is to add the salt to the tomato before draining the tomatoes: the salt will make more liquid.
For two people you will need:
- 6 medium tomatoes, washed
- 3 tbsp of olive oil
- Fresh baguette or any other bread you have at home (I only had sliced bread)
- Sea salt flakes, garlic salt or chilli salt flakes
- Couple of fresh basil leaves
Method:
Grate the tomatoes after halving them, add some salt, let it sit for a minute or two, then get rid of the excess liquid using a sieve, season and mix the olive oil in. Serve on toasted bread with a few basil leaves.
Pan con tomate – super easy, refreshing and light.
