This is something I’ve been probably eating all my life and I just realised that I might be the only strange person doing so. But, thinking about a the current food trends, it’s not at all strange! In fact, it’s quite nutritious and very yummy at the same time. It’s ridiculously easy and quick to prepare. For me it’s an autumnal snack, maybe because of the mayo-creme franchise “dressing”. I don’t like to call it a salad, because it’s basically apple and sweet corns what you need and some cheese – so I prefer to call it a snack. It’s best when it’s chilled, so spent about 30 minutes in the fridge before serving.
My little girl also loves it, I think it’s a great afternoon snack for children, or even for tea.
So here’s what you need for a cereal bowl size of portion (two children’s portion):
1 medium sweet apple (Royal Gala or similar), chopped into small cubes
1 handful of cheddar cheese cubes
1 handful of sweet corn kernels (either thawed from frozen or canned)
1 tbsp of creme fraiche
1/2 tbsp of mayonnaise
salt and pepper to taste
Chop the apples and the cheese into bite size cubes and combine everything.
That’s it! Told you it was going to be easy!
Enjoy with fresh baguette or toasted bread.
