Super healthy and bursting with flavours: this beetroot and spinach risotto is simple, earthy and colourful.

Ingredients
  • 250 g roasted beetroot cubed
  • 150 g fresh baby spinach
  • 1 medium leek sliced (use as much as possible of the green part!)
  • 2 garlic cloves minced
  • 250 g arborio rice or other risotto rice
  • 1 lemon zested
  • 750 ml vegetable stock
  • 2 springs fresh thyme
  • 2 springs fresh rosemary
  • 2 tbsp olive oil
  • salt and pepper to taste
Instructions
  1. First, cut about two small/medium beetroot into halves and roast them in the oven for 50-60 minutes until they are tender (170 degrees). Let them cool and peel them. Chop them into small, about 1.5cm x 1.5 cm cubes. Set them aside.

    Add the garlic and the leek slices with the olive oil to a large pan and let them soften on medium heat for 3 minutes. Then add the rice (wash it beforehand). When it starts sticking, add half of the stock.

  2. Tip in the beetroot, the herbs, and the lemon zest. Cook on low heat for about half an hour. Keep adding some more stock until it's gone. Then check the rice - it should be al dente.

  3. Add the fresh spinach leaves, cook for one more minute and turn off heat. Cover it until serving.

  4. Sprinkle some freshly juiced lemon juice over the plate when serving the dish.

  1. Ooh the vegan wraps look good. I’ve always avoided the beeswax wraps as vegan, so good to see a vegan alternative. The risotto looks amazing. I love beetroot and I’ve never thought to use it in risotto. What an amazing colour!

  2. My favourite lunch is roasted vegetable cous cous with feta cheese crumbled over the top. Mmmmm

  3. Sandwiches, quiche, sausage rolls, crisps, smoothie, fruit, salad and yogurt.

  4. Egg and cress ( not everyone aggrees with my choice ! ….. )

  5. Hummus, olives, cheese and onion sandwich and baked crisps xx

  6. Cheese and onion wrapped in beeswax paper, not soggy and keeps them fresh and tasty

  7. My favourite packed lunch is a roast chicken salad sandwich.

  8. Pre-coeliac diagnosis it would have been cous cous, roasted veg and leftover chicken. Now i’m struggling as there’s so much I can’t eat but I’ve never thought of risotto as a packed lunch option so thank you for the idea!

  9. My favourite packed lunch is tabouleh with radishes, cornichons, olives and feta arranged as little treats on the top and then a sliced hard-boiled egg in the middle.

  10. I love a peanut butter and jam sandwich -they dont go off – nothing worse than a sweaty cheese sarnie!

  11. Chicken, Bacon and Mayo Sandwich and a packet of Chilli Doritos

  12. Crusty French stick with ham and cheese. Crisps. Diet Coke. Fruit.

  13. Either leftover quinoa, goats cheese and turkey burgers with spinach or a houmous salad!

  14. Egg & Salad Cream Sandwiches, home made cherry scones, diet pepsi & a home made cake of some sort.

  15. Pasta salad! That’s almost always what I made for a packed lunch….can mix it up with whatever I have that needs using up
