I’ll be honest with you, I have never really heard of Amaranth flour before. I knew it’s a gluten free flour but I never realised that Amaranth is an ancient grain; once a staple of the Pre-Colombian Aztecs, it is packed with lots of nutrients. Unusually, amaranth contains all nine essential amino acids, including lysine, which is important for collagen production. A natural free-radical fighter, amaranth also contains phosphorus, potassium, calcium, magnesium and iron and is an excellent source of dietary fibre and protein.
This particular box of Amaranth flour I have received from Erbology is 100% organic, made from amaranth seeds. I have also received some lovely almond and amaranth oil, a box of organic dried Aronia berries and a box of organic Transylvanian walnuts.
So I was trying to come up with a recipe when I found myself thinking about Christmas dinner and nibbles – came the idea of a flavoursome biscuit or cracker that would work with different textures and types of nibbles like cheese, olives, hummus, or even sweet onion or tomato chutney. These crackers really do.

Spiced Amaranth Flour Crackers With Aronia Berries and Walnuts
- 200 g amaranth flour
- 100 ml water
- 1 handful walnuts roughly chopped
- 1 handful dried aronia berries
- 1 tsp amaranth oil or any other vegetable oil
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
Preheat oven to 175 Celsius.
Mix everything in a mixing bowl.
Lina a baking sheet (I use a silicone mat so no need for greasing) and place a tablespoonful of batter on it, then lightly flatten it into an inch sized oval shape. Pretty much how your cracker will be shaped and look like. Bake until firm, around 35-40 minutes, but not too hard.
They are delicious with dips and antipasti! Enjoy.
