I love brownies and oddly this has been a recipe I haven’t “veganised” yet. So when my daughter requested brownies the other day, I thought this is the perfect time to do so! I looked up a few recipes but I thought they all use too much sugar. So I used less (but still plenty in my view) and added a mixture of dark chocolate and milk chocolate chips.
To be honest, since there is margarine, we don’t really have to make such big changes at all. Just a little nut milk, as much as is needed to make the batter lighter and make these vegan brownies perfect.
What’s non-negotiable for me is the fair trade coca powder in this recipe. Luckily now you can buy different brands in most supermarkets.
I always advise buying fair trade products whenever you can do so. Yes they are a little more expensive, so that the farmers and growers can make a decent livelihood too. Not just the big and powerful corporations! The chocolate that costs you £1.20 in the supermarket has hardly seen any real cocoa. Plus the big labels producing them are pushing farmers into poverty by not paying them a proper and fair price.
Fair trade is all about supporting producers to grow their own businesses, helping them to have an impact on their own communities, plus giving them direct access to markets. Not to mention of course bypassing corrupt local businesses and shady government officials along the way.
But back to these delicious super simple vegan brownies. In an airtight tin they will keep for another day or two. But I’m pretty sure you will not be able to keep them for longer as I’m sure they will be gone in no time!

Super Simple Vegan Brownies -brownies, but vegan. Really!
- 180 g flour
- 120 g vegan butter or margarine melted
- 200 g soft brown sugar
- 80 ml oat milk or other milk alternative
- 80 g unsweetened cocoa powder
- 2 tsp vanilla extract
- 3/4 tsp baking powder
- 1/4 tsp salt
- 150 g choc chips

Preheat oven to 175 Celsius.
Add all the ingredients to a mixing bowl and combine with a wooden spoon.

Grease a bottom of a brownie or shallow loaf tin with margarine (or vegan butter) and spoon the batter into it evenly spreading it in the tin.

Bake for approximately 25 minutes. Let it cool and enjoy!
