I’m a bit of a matcha addict lately. Not just as a tea (once a day at least), but I also love combing it with sweet flavours. Like cakes and ice cream. It adds the subtle bitterness of the finest green tea and a lovely, bright green shade. It’s such a lovely and easy meal. Tastes like summer 🙂 I love it freshly prepared with a slice of rye bread, my husband prefers it with piece of grilled chicken and should Bobcat have a picky day (again) then I just blend his portion into a sauce and serve it with pasta and cheese. This pan-bread is one of the easiest thing to make and I really like the combination of nuts and dried fruits. Not using any flour, it’s a cross between cornbread and cake. Really yummy and quilt-free, if you manage not to eat the whole bread at once. The original recipe is from River Cottage Gluten Free I changed a few things, like using the whole packet of 100g ground nuts (almond instead of hazelnut) because I thought both the eggs and the banana are quite large.
