One of the my little guy’s tolerated (i.e. cooked until it’s unrecognisable and well hidden under mountains of cheese) vegetables is courgette. Probably, because it’s a little tasteless. Therefore, I try to use it whenever I can. It can go into a lot of different dishes, including risotto. The other evening, when I was desperate to find a way to make him to eat some salmon (which is an absolute no-no) came up with this recipe. The creamy, cheesy rice is always a winner with children, so might as well try to add some extra, healthy stuff to it. It …
family meal
I love pasta. I’m like an Italian, I can live on pasta, cheese and some olives. Bobcat too, minus the olives. When you have a picky toddler who’s addicted to pasta you try to make it versatile, healthy and at the same time edible for the entire family. (We got to the point of pasta-love where I don’t even give a damn about the other qualities of a restaurant when eating out with my family, but one item on the children’s menu: pasta with tomato sauce.) So this one is somewhat sophisticated and enjoyable for adults too. Takes no time, …
It’s such a lovely and easy meal. Tastes like summer 🙂 I love it freshly prepared with a slice of rye bread, my husband prefers it with piece of grilled chicken and should Bobcat have a picky day (again) then I just blend his portion into a sauce and serve it with pasta and cheese. Voila, fresh and healthy dinner for everyone in 45 minutes. The most important is not to overcook the veggies. I cook them only until they still keep some of their firmness. This way they are going to preserve more vitamins and the individual vegetable pieces …
Keep coming up with new pasta dishes for the whole family (preferably a meat-free one) is challenging. I was looking for something new to try when I came across this recipe on BBC Good Food I liked the idea of spinach and ricotta combination filled pasta tubes. Rotolo (Italian for roll) can be made from fresh lasagne pasta. But I didn’t want to bother making the dough or cutting fresh pasta into small pieces so I used lasagne verdi sheets instead. It makes the whole process a lot faster and easier – and for a busy mum that’s a great bonus. You …
Easy And Quick Home Made Pizza Base And Tomato Sauce
Bobcat has reached that infamous toddler’s life time event, where pizza is the best food in the whole world and I expect his love of pizza to stick around for a few years 🙂 So I decided to learn how to make yummy and healthy pizza at home, which doesn’t take too much time and effort. So here’s a recipe for both, absolutely takes no time to prepare them, therefore it’s ideal for a quick meal and you can add your favourite toppings. They are going to be thin, but rustic looking, fluffy pizzas. Even if you’re not a great …
Creamy risotto with butternut squash and chestnut mushrooms
Not sure what are your little one’s feelings towards risotto, but Bobcat is not a big fan of it. If he likes it, eats it when it’s freshly prepared (such a gourmet this child), but when it’s reheated, he refuses it. I cannot really blame him, combinations such as asparagus and cherry tomato are very boring for small toddlers. This winter risotto recipe, however, was a great success. He loves butternut squash for a start, could eat it every day. Even though, I prepared it more as a grown-up meal because I wasn’t sure if he’s going to like it. …
