I fell in love with farro a few years ago and it was love at first taste. Similar to (and often interchangeable) pearl barley and spelt, but it’s more chewy. I love it for its neural taste. I only used it in salads so far, more to explore with soups. I normally buy the quick cook version, otherwise it needs soaking (don’t have time for that, nor am I so well organised. More into impulsive cooking ?). For vegetarians and vegans it’s a great source of extra protein and iron but also an excellent source of high-fibre too. This salad is …

This gorgeous salad is one of my long time favourites, really should have shared the recipe long ago! I can safely call it a full meal as it’s so fulfilling and flavoursome. Full of vitamins, protein and makes a perfect midweek meal. We have this almost every week not only because I love it, but also because hey… it’s a salad, so takes no time to prepare it. It still surprises me how everyone loves it whenever I serve it to guests, as for me it’s such a regular dish. It works very well in wintertime too when you just …
We had some of my husband’s male friends coming over the other day for a quick lunch before watching football. And what a good wife am I? I prepared roast chicken for them with greek salad, but then I thought, I should probably give them another – more substantial – side dish option before heading to the LIBRARY. This salad is great for barbecues, accompanying meat or just by itself (the way I eat it). You can also play with the spices: I used dill, but mint will just work as well (especially in summertime), you can also use less …
I’m a big fan of salads combining fruits, vegetables and cheese. I could eat them every day. When you’re having guests and you want to prepare something different from the usual green salad, this could work very well as a good-looking, tasty and not your everyday starter dish. There’s not much work with it either, ready in 15 minutes. The kids will love it too as it’s got sweet tasting fruit in it. Serves 4 adults. Ingredients: For the salad: 150g baby or young spinach 2 ripe but still firm sweet pears cored and sliced. Half a pomegranate’s arils …
I assume – dear reader – you feel the same way after all the holiday celebrations: not only that you ate a lot in the last 2 weeks, but lots of sugary, greasy or meaty things. (Not to mention the drinks…) I feel that my body needs healthier food, because I even have cravings for lighter, vegetarian meals. But still want something substantial and tasty for the family dinner table. So here’s another yummy winter salad, warm, full of protein, hearty, fulfilling and healthy. Quinoa is loaded with fiber, potassium, magnesium and iron. Avocado is a great source of protein too. …
