It’s Food Waste Action Week, so I thought I’d share some recipe where you can use old fruit or veg: well this is definitely one of those as I used old apples, just cut the brown bits out.
Why is Food Waste Action Week important?
Wasting food is one of the biggest contributors to climate change. A lot of water, land, energy, time, and transportation go into producing our food, and yet we waste 4.5 million tonnes of edible food every year in UK homes. That’s enough to make 10 million meals! Plus cutting down on food waste will also save you money. And it’s easy to do so: just buy as much food you eat and eat the food. That’s it. This is a super easy and straight forward recipe. These vegan apple muffins are absolutely fool proof. Simply grate the apples, mix the ingredients in a bowl and bake. And who doest like apple muffins? They are simply delicious.

Vegan Apple Muffins
- 300 g all purpose flour
- 120 g brown sugar
- 15 ml maple syrup
- 3 medium apples peeled and grated
- 160 ml oat milk or other dairy free milk
- 50 ml sunflower oil or any other light vegetable oil
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 1/2 tsp soda bicarbonate
- 1/2 tsp salt

Preheat oven to 175 Celsius.
Peel and grate the apples.
Combine all ingredients in a mixing bow.

Divide the batter evenly between your 12 muffin or cupcake holders.

Bake them for 25-30 minutes and check with a fork to see if they are done.
