New Year – New You?
I for one will be doing Veganuary again – and hoping to stick to it. I’ve been in a limbo since the last one, being a vegetarian I still find it hard to stick to it. Largely, because my family isn’t vegan so a lot of time food prepping and feeding a family of four comes down to convenience, especially if you have sensory and picky eaters. So, i decided to do it again. But I’m not going to beat myself up if I can’t stick to it, because I’m still doing a big difference by not eating meat and whenever I can, I cook vegan for the whole family. Out of this effort, all my foodie treats, that are just for me – became vegan over the last year.
I’d also like to cut down on my caffeine intake, which is a New Year’s plan for 2021. I noticed lately, that my caffeine intake has a negative effect: anxiety issues don’t mix well with too much caffeine. But since coffee is a real treat for me, as it’s a way of getting 10 minutes just for myself sitting down and enjoying it, I decided to swap some of my daily cups to a caffeine free version. But I don’t believe in caffeine free coffee. And this is how I found out more about Barleycup, which is a naturally caffeine free, vegan cereal drink, granulated like coffee and sold in glass bottles.
It’s made with cereal grains and the roots of chosen plants – in particular, barley, rye and roots of chicory, dandelion and sugar beet. They then get roasted and turned into the powdered or granulated form of Barleycup. Only natural processes generated by the application of heat, hot water, hot air and water vapour are used to create Barleycup. No chemicals are used in Barleycup production. it has a mild, coffee-like taste.
It’s low in calorie but high in fibre: Barleycup offers approximately 1g of fibre per single cup and only contains 10 kcals per cup. Consuming products that contain fibre (and inulin) may benefit your health by preventing the onset of certain diseases, including diabetes, coronary artery disease, obesity, and cancer, as well as by removing harmful substances from the body such as heavy metals and bile acids.
Vegan Dalgona Coffee Recipe
I prepared this delicious drink with oat milk, but I also like it with other nut milks. All you need for this delicious, coffee-treat to make is an electric hand mixer. It’s ready in 5 minutes: you can either have it hot if you heat the milk beforehand or cold – or you can even add ice cubes.
For one serving
- 2-3 tsp of Barleycup granulates
- 2 tsp of brown sugar
- 2 tbsp of water
- 100 ml oat or other nut milk
In a bowl (I used a measuring jug) combine sugar, Barleycup granulates and water. Using a hand mixer whisk until mixture turns silky smooth and shiny, then continue whisking until it thickens and holds its lofty, foamy shape.
Pour the milk in the coffee glass and dollop the whipped mixture on top.
That’s all! It takes about 5 minutes to make it and it’s really impressive.
