I’ve got really fed up lately that in the morning rush, getting the kids ready for school, preparing everyone’s packed lunches and making breakfast for everyone – but for myself. So, I often end up with a banana on the way to work or at work (not unhealthy but still not enough) or a piece of toast with vegan butter (not exactly the healthiest breakfast on it’s own). I thought, right, new year resolution: this has to change. And so I started to make overnight oats for myself.
The thing is that I rather have 10 more minutes sleep then to get up and make fresh porridge for myself. Then I thought oh yeah, overnight oats are now the thing and all the meal prepping. So I started to make them. Got 3 of those 300ml flip top jars so that I can make 3 at the time and they keep in the fridge perfectly for the next 3 mornings.
I use oat milk of course, being my favourite dairy free milk – oats with oat milk…. who said you can’t do that? – and any nut butter as a base. These are my go to ingredients:
Vegan Overnight Oats Ingredients:
6 tbsp oats
100ml oat milk
1 heaped tbsp peanut or almond butter
1 tsp chia seeds
1 tsp Maple syrup
Put the oats in the jar first, add milk, chia seeds and your chosen sweetener and stir well. Then add the nut butter and mix lightly so you’ll find nice little chunks of nut butter the next morning!
And from here, you can add anything you like, really. Top it with banana slices, berries – any fruit or nuts you like! That’s it.
It’s absolutely perfect for the morning rush or take it to work. Very nutritious, full of vitamins and minerals. Try it, you won’t be disappointed! (Also, as a bonus, I can get all the ingredients from my own zero waste shop, Refillogic.
