As you probably know, I (and the children) absolutely love pancakes and I always try to hide some extra goodness in them like mashed banana or grated apples, or sometimes even both. And oats! Oats are so delicious and healthy. They’re a gluten-free, whole grain and a great source of important vitamins, minerals, fibre and antioxidants. Oats are also rich in carbs and fibre, but also higher in protein and fat than most other grains. So these vegan spiced apple and oat pancakes for growing little kids are very nutritious and delicious treat. With this pancake recipe, I finally also worked out how to make this particular pancake recipe a vegan one. All I needed to do was play around with the measurements a bit and bingo!
These vegan spiced apple and oat pancakes are soft and fluffy. They need to be fried on medium heat, and it also gives them a little crunchiness on the edges – which I really like. At first it might look a little too loose as a batter texture for pancakes (for there is no egg as binding agent), but don’t worry, it will work out. If after the first of these vegan spiced apple and oat pancakes you find the pancake too soft still – just add a spoonful or two more flour. But the soaked oats should also add to this.
These vegan spiced apple and oat pancakes are just so nice on cold autumn and winter mornings – a sweet, warm and still healthy and nutritious treat.

Vegan Spiced Apple and Oat Pancakes
- 250 g oat flakes soaked for at least 2 hours
- 140 g all purpose flour
- 150 ml oat milk
- 2 apples peeled and grated
- 1 tbsp soft brown sugar
- 1 tbsp margarine plus an extra tsp for each pancakes to fry
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt

Measure out all the ingredients.

Add them all to a mixing bowl and combine them using a whisker.
Fry them in a frying pan on medium heat.

Enjoy them with fresh fruit or syrup, serve immediately.
