Reduced Sugar Rainier Cherry Crumble

This can be made with any fresh cherries of course! Lovely, easy, perfect summer treat served with ice cream.

For the fruit base
  • 300 grams Rainier cherries washed, pitted and halved
  • 30 grams soft brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp corn starch
  • pinch of salt
For the crumble
  • 150 grams Scottish oats same as rolled oats
  • 30 grams soft brown sugar
  • 3 tbsp salted butter melted
  1. Preheat oven to 180 Celsius.

    Mix the fruit base together in a mixing bowl, being careful not to smash the cherries.

  2. Mix the crumble ingredients too. melt the butter in the microwave. I like it less moist, more crumbly - this is how mine looks like.

  3. I don't grease the bottom of the dish - I don't think it's necessary with all the moist coming from the cherries. If you're unsure, just grease the bottom lightly. You'll need a small and shallow dish - this is measured for 4 people only.

    Place it into the oven, you'll need 30-35 minutes to have a perfectly baked cherry crumble.
