Add some chilli oil at the beginning to make revamp this classic winter warmer.
Fry the onions with the chilli oil for 5 minutes on medium heat, use a large pan.
Add the broccoli, the thyme and the stock. Lower heat, cover it with a lid and let it simmer for 15 minutes, until the broccoli is soft.
When it's cooked add the single cream or single soy, bring it to boil, cover it and cook for a further 2-3 minutes on low heat.
Use a handheld blender to reach the desired smoothness.
Crumble the Stilton or vegan hard cheese on the top of each bowls and serve the soup with French baguette or crusty bread - anything you like really! Enjoy.
