Blueberry Slush with Coconut Milk

Super easy recipe that is vegan but guaranteed to be a favourite quick treat.

  • 300 g blueberries
  • 700 ml unsweetened coconut milk
  • 100 ml maple syrup
  • 1 squeeze fresh lemon juice
  • 1 tsp vanilla extract
  1. Put all ingredients into the blender and give it a whizz. Place the mixture into a freezer safe container and freeze it overnight or about 4-6 hours. Then take it out, let it sit for 15 minutes to soften, put the mixture back into the blender and whizz it again until it's smooth. Serve immediately.
