The popular Buffalo wings - without the chicken! Super simple, tasty and satisfying!
Preheat oven to 180 Celsius.
In a mixing bowl, mix the flour, the garlic powder, cumin, paprika and salt.
Add the milk and whisk until the batter is blended.
Dip the cauliflower florets in the batter, followed by the bread crumbs. Spread them out on an baking sheet (covered by reusable baking liner or oil the surface )
Bake them for 25 minutes.
In the meantime, prepare the Buffalo Sauce: melt the butter and mix in the hot buffalo sauce.
After 25 minutes baking, spoon them over the cauliflower bites.
Then back they go for another 10 minutes of baking, until they are tender.
During the last 10 minutes of baking, you can make the Ranch Sauce.
Put the cashews, spices and lemon juice and the oat milk in the food processor and blitz until it's smooth.
Chop up some celery and serve everything together whilst it's hot. Garnish with some fresh cilantro.

Tip: save the cauliflower leaves, roast them for 15 minutes (same time as the cauliflower bites) and don't waste them. They are delicious, like roasted kale and go well perfectly with the Ranch Sauce!
