Recently, I have received lots of fresh and yummy Rainier cherries to as they are just in season. End of June and beginning of July is the best season for all cherries. I would normally eat them fresh, but I really fancied some dessert made with fresh fruits. Rainier cherries are considered a premium type of cherry, they are sweet with a thin skin and thick creamy-yellow flesh. They were named after Washington state’s biggest mountain: Mt. Rainier.
They have many health benefits: they’re full of antioxidants, they contain phytosterols which can help to lower cholesterol, have anti-inflammatory properties, they contain loads of Vitamin C, fibre and anthocyanins.
Now of course this recipe can be prepared with any cherries – but you might need to add some more sugar as this is reduced sugar recipe. The Rainier cherries are sweeter than other varieties so this crumble needed less sugar. (Yay!)
Also, you can add a little more oats or make the oats more moist by using more butter – as you like it. My version is slightly more crunchy as I think it goes better the soft, baked fruits. But each to their own!
Serve it with ice cream – it will make a perfect summer Sunday lunch dessert course and if you’re entertaining, you’ll get ALLLLLL the wows!

This can be made with any fresh cherries of course! Lovely, easy, perfect summer treat served with ice cream.
- 300 grams Rainier cherries washed, pitted and halved
- 30 grams soft brown sugar
- 1 tsp vanilla extract
- 1 tbsp corn starch
- pinch of salt
- 150 grams Scottish oats same as rolled oats
- 30 grams soft brown sugar
- 3 tbsp salted butter melted

Preheat oven to 180 Celsius.
Mix the fruit base together in a mixing bowl, being careful not to smash the cherries.

Mix the crumble ingredients too. melt the butter in the microwave. I like it less moist, more crumbly - this is how mine looks like.

I don't grease the bottom of the dish - I don't think it's necessary with all the moist coming from the cherries. If you're unsure, just grease the bottom lightly. You'll need a small and shallow dish - this is measured for 4 people only.
Place it into the oven, you'll need 30-35 minutes to have a perfectly baked cherry crumble.
