Another veganised recipe for my vegan readers. This time it’s a vegan date and chocolate chip cookies recipe!
When it comes to baking and replacing ingredients for vegan ones, well, things were never easier than these days. So many substitute items are available, but I like to keep it simple. I like recipes that don’t ask for 20 ingredients, too fancy or too expensive ingredients. You know, maple syrup is lovely but it’s a lot more expensive than soft brown sugar. Also, I do like almond flour and coconut sugar, but then again, most people don’t keep this in the cupboard just in case. So I prefer not to use them in recipes quite often. It doesn’t mean you can’t either though, you can always replace some part of the all purpose flour for almond flour and add coconut sugar instead of the regular soft brown sugar – it’s up to you! The beauty of baking, isn’t it.
We’ve worked on this recipe over the weekend with my daughter to get it right so we made three batches! Not that they were bad or inedible, they were really tasty, but needed a little improvement. But the third batch was perfect so I’m going to share that recipe with you.
Like I sad – you can always tweak a little here and there, like adding seeds and nuts or replacing some part of the flour for almond flour. This is super simple and straight forward – kids will love helping and also eating of course! Of course you will need to help with chopping the dates – they need to be small, like candied fruit pieces.
I hope you’ll like it. They will keep a few days in an airtight container, but I reckon they won’t last long!
Vegan Date and Choc Chip Cookies Recipe
Vegan Date and Choc Chip Cookies
- 225 g all purpose flour
- 70 g soft brown sugar
- 60 ml vegetable oil
- 90 g unsalted peanut butter or other type of nut butter
- 10 large dates chopped
- 100 g vegan chocolate chips
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract

Chop the dates and mix all ingredients.
Place cookie dough in the fridge for an hour at least.
Make golf ball sized balls and place them on a baking sheet and squash them gently.

Preheat oven to 180 C.
Place the baking sheet in the oven and bake the cookies for 15-20 minutes.
